These doctors want to express how an urbanized country such as the United States is unhealthier than third world countries where some of the diseases present here are unheard of over there. By removing animal-based and processed foods from individuals who are dealing with a degenerative disease diets, they could see changes not only in their weight but also in their health; even without the consumption of their prescribed medications. Drs. Campbell and Esselstyn are trying to convey how participating in a plant-based diet has more pros than cons. With the only con being the taste and texture of the foods, a plant-based diet is less expensive, healthier, and will lead to lower health care costs than an animal-based and processed food diet. The puzzling part of these doctors’ findings is how easy the solution is to taking care of such big issues in today’s world. By taking part in a plant-based diet, obesity, health care costs, major medical operations, heart disease, cancer, and diabetes will decrease. In all, it leads to a decrease in the percentage of deaths related to degenerative disease and a much needed boost in the nation’s economy.

As our community grows smarter and smarter dealing with science and math, we are getting sicker and fatter than our ancestors before us. Why is this happening? It is because of our animal products and processed food consumption. It makes sense though. Meat is filled with fat and chemicals after it is processed by factories. We eat to attain energy. Animals eat plants to obtain their energy. We eat meat to harness that energy. We could just skip the middleman and eat more plants instead of meat. That way less energy is being lost. Campbell and Esselstyn go on to explain that no one would be willing to help the public understand that a plant-based diet is better than their regular diet. The reason for that is that almost all of the industries today profit from the community’s sickness and obesity. So that is the main reason for the movie “Forks Over Knives”. It is to education and inform the public that a plant-based diet is a good way to improve your health. Dr. Campbell, first, noticed that this diet was better for humans when he saw that areas that consumed large amounts of animal-based food were more susceptible to developing liver cancer. However, this was not the case for the poor areas, which only had access to cheap, plant-based food. Is it weird that America is at a higher risk for deathly diseases than other countries? The reason being is what we consume compared to them. Americans eat a lot of animal-based foods, whereas; other countries eat more plant-based foods. One piece of data that has really stuck to me since watching the video involves World War II. When the Nazis were attempting to take over most of Europe, in order to feed the soldiers they took all of the livestock and fed that to the soldiers. This left civilians eating mainly plant-based foods. Data showed that the civilians were less likely to be at risk for cancer while eating the plant-based food. Once the war was over and they started eating meat again the risk of cancer had risen. This data does not only concern a few people, but an entire population. To ignore this type of data would be foolish. As the years go by, we are being informed about the health risk of eating meat that has been processed. A family member of mine decided to give up meat. It has been four months and she feels like she has more energy, healthier, and I have noticed her weight lost. Americans are most at risk for heart disease, cancer, type-2 diabetes and obesity. Dr. Campbell and Dr. Esselstyn want people to realize that participating in the plant-based diet is something that people need to consider and cut down on the amount of meat they eat at least.

We Americans tend to solely depend on medicine rather than natural herbs that our ancestors used. As a result of the growing technology, our health is at risk. The two doctors involved in these findings assure viewers how this task and battle with bad health can easily be solved, but it is just up to us to take initiative. As a result of this video, we see that it is beneficial to most industries and companies that we consume processed foods, and meat. Although many of the fast food restaurants may take part into many busy lifestyles, it has a greater impact on the length of our lives. In conclusion, I am guilty of consuming more meats than plants into my diet, and I also use fast food as an alternative. I personally have been convinced to change my lifestyle and my diet. Campbell and Esselstyn may have not totally waivered me from all of my food choices, but I am willing to make some changes.

The documentary Forks Over Knives follows the personal lives and work of a two men who lead the investigation of this topic, Dr. T. Colin Campbell and Dr. Caldwell Esselstyn. They have endless amounts of data that show and prove that a western person’s health will improve significantly if they don’t eat as much meat and other process foods. Dr. Campbell and Esselstyn suggest a diet more like the East which includes far more servings and the consumption of fruits and vegetables. Some of the most compelling data included a study of the Nazi invasion of European countries. When the people were oppressed and their cattle was stolen they were forced to eat more vegetables. They would eventually gain back their cattle for a period of time only to have it stolen again. During these periods of having meat and not having meat, fluctuations of cancer risk would correspond with the availability of meat. Other arguments and proof included the pass use of food as medicine and having the ability to cure illnesses and dysfunctions of the human body. the over consumption of meat does the exact opposite and allows for more things in the body to go wrong and cause fallacies in natural responses of the body. The consumption of vegetables causes the senors on the stomach to tell the brain we are full quicker than would meats or other greasy fast foods.
